It was fermented in separate batches at moderate temperatures with regular pump overs to maximise the colour and flavour extracted. Aged in French oak, 25% new, for 16 months before bottling. With the depth of fruit flavour the 2014 Two Steps be certainly be enjoyed now with a full flavoured meal though it will also continue to improve with further bottle age; 4 - 8 years or so.
