Sourced from the spectacular Pyrenees ranges west of Ballarat comes this delicate and refreshing blanc de blancs. Picked under spotlight in the middle of the night, cooler temperatures allow grapes to reach the crush at optimum temperature.
In the glass, it's a brilliant pale straw with a steady bead of fine, gentle bubbles. On the nose, there's an array of citrus fruit, apple flavours, hazelnut and light yeasty notes. On the palate there's grapefruit, some toastiness and a touch more yeast. A hint of lemon meringue appears before a fine acid backbone. Crisp and refreshing effervescence cleanses the dry finish.

The production of “methode traditionelle” sparkling wines has been an integral part of the winemaking at Blue Pyrenees Estate for many years. Although hand picked fruit is often desired for the production of the premium cuvee juices, day time temperatures in Australia can mean that hand picked fruit is often quite warm when received into the press after a day’s picking. In 1992, the team at Blue Pyrenees decided to experiment with hand picking fruit in the middle of the night, under floodlights, to optimize both fruit condition and temperature. The results were amazing – crisp and clean cuvee juices of outstanding quality. The Midnight Cuvee was born!
Nowadays the Blue Pyrenees team select the best fruit parcels, whilst on the vine, to be separated out from the rest and picked at night by hand to generate the juices that will become the Midnight Cuvee. Although very laborious and time consuming, the rewards are evident in the glass.
