The volcanic soil in which this wine is grown and named for has created the ideal conditions for high quality grapes. Out of respect for this quality the grapes have been harvested at night when the fruit is at its coolest and then pressed and fermented with selected yeasts to retain a high level of carbon dioxide, resulting in the refreshing spritz common in high quality sparkling wines.
