Distinct yet classic pale golden straw in colour. Subtle grapefruit, and fresh strawberries sit as high notes over a appealing base of nectarine and secondary aromas of nougat and crushed biscuit. These complexities evolve in the glass, providing an inviting introduction to the wine. A lively and tight mousse of persistent bubbles invigorates the mouth while delicate honeydew melon, lemon meringue and toast flavours excite the taste buds. A tight citrus acidity leads to a long dry finish. It's punchy, bright and has a smooth, delicate palate. Brilliant example of new world wine, using the gifts of the old!
WINEMAKER COMMENTS Mitchelton NV Cuvee is made in a modern style with secondary fermentation completed in stainless steel pressure tanks to retain varietal expression and purity of fruit. The classic French varieties of Chardonnay and Pinot Noir are employed with Chardonnay offering light citrus and floral notes while Pinot Noir adds depth, complexity and red fruit fragrance. Fruit was sourced from the Adelaide Hills due to its colder nights and slower ripening conditions and harvested early for a tight palate with balanced acid structure and length. Juice extraction was extremely gentle to ensure minimal colour extraction from the Pinot varieties, while retaining clean, light, varietal flavours and aromas through primary fermentation. Following the secondary fermentation a dosage liqueur was added to the wine to increase the residual sugar to around 9g/L, promoting extra richness to the palate while retaining a pleasantly dry and clean finish to the wine.
