This wine is pale straw in colour with a finely beaded mousse. The nose exudes lifted tropical notes of guava balanced by citrus notes and fresh thyme characters. The palate is full with sufficient weight and texture, balanced by an underlying flinty minerality typical of the Seaview Vineyard with a fresh and crisp finish.
The Seaview vineyard is exposed to some of the toughest growing conditions in Marlborough; high sunshine and wind, cool nights and low rainfall which produces a smaller, thicker skinned berry with intense fruit flavours. The rolling contours of the vineyard result in significant variation (smaller, more intensely flavoured fruit on the ridges, balanced by lush growth in the gullies). This wine is composed of four small batches, a combination of coastal blocks and others at higher altitude and more inland.
The Sauvignon Blanc parcels were harvested separately, pressed and cold settled for 72 hours then the clear juice racked off. Each parcel of juice was fermented separately, using selected yeast strains for Sauvignon Blanc to enhance varietal character. Following this a long, cool fermentation took place over four weeks. The parcels were then blended, stabilised and filtered prior to bottling.
