Handpicked premium fruit from select Adelaide Hills Vineyards has been gently whole bunch pressed direct to premium French oak. Fermentation was conducted by wild yeasts followed by lees stirring and maturation for 9 months.

2016 Vintage: 91 Points - James Halliday, Wine Companion "Burgundy clones 76 and 95, and Mendoza, from three vineyards, fermented on full solids in French puncheons (25% new) with partial mlf, matured for 9 months. Super elegant, light to medium-bodied with white-flesh stone fruits to fruit fore; a crisp finish, the oak in a pure support role."

Individual blocks are picked separately before wild yeast fermentation on full juice solids in French oak puncheons. Partial malolactic fermentation in oak, lees stirred twice weekly for 9 months before blending and bottling.
Fermentation and Maturation takes place in new (25%) and seasoned French oak puncheons for 9 months.
