Grown and specifically made for maximum depth and mouth coating richness, California Dreamin' is truly big and buttery Chardonnay from Australia's leading region for the style. Fermented oxidatively without sulphur addition using a specially selected yeast and given a long and slow malolactic fermentation before oak maturation in alternate oak and small format French. The result is a diacetyl (butter compound) count 2-3 times the average Chardonnay.
An extremely unusual vintage in the Hunter Valley - a true roller coaster - with hail throughout the season, heavy January rains that appeared to ruin the vintage before the warmest and driest February in memory saved the vintage when often it destroys it. In the end a good to very good vintage although not a particularly 'big' vintage.
