A great value Chardy from WA, Capel Vale's 'Debut' Chardy offers up aromas of melon, pineapple, peach and apple. The palate is clean and fresh, with citrus and stone fruit characters providing good weight. This wine has benefited from the long, cool ripening period, the texture interesting, the finish long and crisp.

Our debut series of ready to drink wines are designed to present the optimal fruit characters from each variety of grape, grown in its most suitable vineyards in cool climate Western Australia.
Chardonnay from the cool South West of Western Australian can stand alone with its lifted tropical fruit aromas of pineapple, peach, apple and melon, balanced by a clean, fresh palate displaying citrus and stone fruit characters. The texture and depth are typical of a cool climate West Australian Chardonnay and follows on with long and crisp finish.
Harvested at optimum ripeness, crushed, de-stemmed, must chilled and de-juiced. The juice was allowed to cold settle for 36 hours and subsequently racked off, upon which an aromatic yeast was introduced for fermentation. The ferment was halted early to aid in preserving the natural grape sugars and to add body and enhanced fruit character to the finished wine.
