Boy oh boy, Taylors have been churning out some bloody brilliant drink of late! Their estate range is absolutely smashing it with the critics, and this Chardonnay is now wearing more shiny medals than it can carry! The wine is a pale straw with a slight green hue to the edge. Delightful aromas of white peach, nectarines and subtle citrus zest join hints of cashew and cream. Fresh flavours of stone fruit combine with a tropical pine/lime characters, cashews and an underlying creaminess from extended lees stirring to deliver a mouth-filling and enjoyable wine. The wine has a clean, elegant palate, a soft acid backbone and long, persistent finish.
The fruit for this wine was harvested from the Taylor family estate in the Clare Valley at night and delivered direct to the winery. All of the fruit was whole berry pressed, quickly chilled and then pressed. After a short settling period, the majority of the juice was filled to French oak barrels for fermentation. A small parcel of the juice was fermented using wild yeast and a small parcel was fermented in stainless steel. All parcels were lees stirred for 4 months prior to the fermentation ceasing. The wine was then blended, stabilised and fined in stainless steel prior to bottling.
