What seems to start out as a cool climate, minerally and focused Chardonnay, this gradually opens up and shows flavours of butterscotch with developing complexity and texture. A really interesting wine!
From the Winery
Made in a crisp and cool environment, this is reflected in the flavour of the wine. With the mineral flavours and cool climate really coming through in the flavouring and ageing of this wine. Ripe stone fruit aromas are at the forefront of this wine, a true reflection of its origin in the Australian Adelaide Hills. However aged in French oak, these flavours come through in smoky sulfides that help cut through the overall acidity of the wine and gives it a slight hidden butterscotch flavour. These overall flavours are the perfect accompaniment to oysters, fresh seafood or a light pasta.
Reviews
92 Points - James Halliday, Wine Companion "Fermented in used French oak, one-third wild yeast, two-thirds cultured yeast, matured for 8 weeks. A thoroughly modern take, coming up with admirable complexity, but not losing focus on the varietal fruit."
