Paulett's premium Riesing is picked at the coolest time. The fruit is de-stemmed and drained taking only the best and finest juice to give a small but top class production.
It's a dry style that shows aromas of lifted limes, citrus and jasmine florals, whilst the palate is lighter-bodied, zesty and zippy, with lots of lime juice flavours and rocky mineral acidity and a tight, long, juicy finish that guarantees longevity in the cellar for at least a decade! The wine is delicate, restrained and reserved, youthful and taut.

From the Winery
2015 Vintage was almost certainly the earliest and shortest on record, both yields and quality have been above average in most circumstances. A dry and mild spring lead into a mild early summer and it wasn't until February that 'normal' summer conditions really emerged. A very welcome 75mm of rain was received in the second week of January, and this certainly assisted in filling out berry size and maintaining good canopy and leaf condition which in turn really helped bring the vintage to a better-than-expected conclusion.
