These Sauvignon Blanc grapes are night harvested to enhance the crisp fruit flavours and lively acidity. After gentle crushing and pressing only the free run juice is used to make the finished wine. Cool fermentation in stainless steel tanks ensures that the purity of fruit and true varietal definition are maintained.
