From the Winery
Over half the fruit is from the De Bortoli cooler climate vineyard in the King Valley, ideal climate for growing premium Sauvignon Blanc. Remaining fruit is from select old vineyards in the Riverina which each year consistently produce aromatic & flavoursome Sauvignon Blanc.
A record wet start to Winter and Spring gave soil moisture a good head start to the ripening/growing season. The increased cloud cover kept us below average in the solar radiation stakes, which made for a long ripening period. The Summer was dry and warm keeping disease pressure at bay.
Wine making techniques included fermentation at elevated temperatures and fermentation with solids. These techniques improve texture and softness without sacrificing varietal expression. Wine was left on yeast lees ‘Sur lie’ for 4 months prior to blending. A portion of the blend was fermented in French oak Barriques handed down from our Noble One program.
