De Bortoli Windy Peak Sauvignon Blanc Semillon 2017
With intense aromas of grapefruit and gooseberry. This a well structured wine, with flavours of fresh lime and guava with a nice soft acidity.
Winemaking
Fruit was de stemmed and pressed without crushing. Fermented in both French casks and stainless steel vats. Lees stirring post fermentation. Partial malolactic fermentation for creaminess and texture. Thoughtful handling of fruit and wine throughout the winemaking.
