Picked in the cool of the night, the fruit had intense tropical fruit flavours backed by an ideal natural acidity. Winemaker-selected parcels of fruit were allowed to remain on skins to enhance the fruit flavours and aromatics before being pressed at low temperatures. Naturally allowed to warm and initiate ferment, the juice is then transferred to French oak barrels. Fermenting at low temperatures in oak further intensifies the aromatics and allows the development of a finely balanced wine with impeccable structure and finesse.
Displaying a crisp straw colour with a fine green hue, the wine exhibits bright aromas of white peach with a complexing herbal spice and delicate oak notes. Being well balanced with a luscious front palate that extends into a mouth-filling grapefruit acid, this wine lingers with a succulent clean finish. With passionfruit flavours that softly dissipate into the melon and honeydew, this wine is a true representation of the fumé style.
