Picked in the cool of the night, the fruit had intense tropical fruit flavours backed by an ideal natural acidity. Winemaker-selected parcels of fruit were allowed to remain on skins to enhance the fruit flavours and aromatics before being pressed at low temperatures. Naturally allowed to warm and initiate ferment, the juice is then transferred to French oak barrels. Fermenting at low temperatures in oak further intensifies the aromatics and allows the development of a finely balanced wine with impeccable structure and finesse.
