Koltz PAGAN Shiraz 2006
Koltz Pagan Shiraz.gif
Koltz began as a small wine label in 1995 when winemaker Mark Day and Anna Koltunow made their first wine using grapes from the Bottin Vineyard in McLaren Vale. Since that time Koltz has evolved and now specialises in shiraz and shiraz blends from the McLaren Vale region, renowned for its shiraz wines worldwide. Mark Day has worked as a wine maker for Maxwell Wines and Wirra Wirra in McLaren Vale and as a consultant in Italy and France over the last 6 European vintages.

Koltz is a very small producer and all are wines are hand crafted using traditional methods in that they are fermented in open vats and when dry, basket pressed and put to oak. We try to make wines that are individual and reflect our philosophy that wines should be complex but a pleasure to drink at any stage of their evolution.

We are located on a scenic vineyard in the Blewitt Springs region of McLaren Vale and are now in the process of building a small boutique winery. Our estate wines will reflect another phase of Koltz evolution, combining individual attention and European experience with Australian style based on shiraz from our vineyard.

I had this definitive Shiraz with a meal in a very good Italian restaurant the other night and almost feinted! Small hand picked parcels of OLD VINE Shiraz fruit from the Blewitt Springs area are made by using very much handcrafted skills in the Italian 'Aperppasimento' style. Having been dried on a rack for a month to 6 weeks he is left with dark, shrivelled little raisins. Mark my words, this is where intensity starts as via Open Vat fermentation and Basket Pressing they yield a awesome, intense, concentrated juice that is better than the best Shiraz I have ever seen.

16% Alc. is Big and this does not scare me as it shows intensity through many layers of complex and intriguing fruit, oak, tannin and acid to blow your senses away.

I am not sure if you have bought petrol this month yet , but if the budget allows, you must have some of this for the cellar and feel free to thank me later!
Salute!

Mark Day does very little by halves and this blend stopped me in my tracks at a recent tasting with the winemaker. McLaren Vale Shiraz (75%) and Cabernet Sauvignon from Adelaide Hills stick like glue together performing a superlative duet for the taste buds.

Bold Garnet in colour and an upfront nose of Black cherry, coconut and very enticing oak. Big is this wine in alcohol at 14.5% but squashed full of fruit and flavour that my taste buds were in zing mode for ages after the first shot of dramatic intensity had coursed through my palate.
I'll let you know the secret here in that this perfect blend structure has amplified the source of power from sweet Shiraz fruit and structural formwork of the Cabernet to add some pretty impressive length and weight to a very impressive wine.

You won't see this around or amplified through the wine writers guild as Mark sells out his wines mainly in exports and direct sales to the small coterie of the wise Australian drinking public who know, understand and revel in a wine man doing his stuff!

**** 4 .5 Star Halliday Raing winery****
Be confronted with a dark magenta and ominus purple hues. The nose blasts off with lively lifted cherry raspberry bouquet with chocolate mocha hints. Vibrant dark cherry, raspberry and rich chocolate flavours are balanced with an even, textural palate with smooth and supple tannins. The overall palate effect has good length ofrich ripe fruit and a generosity that is the hallmark of this benchmark Barossa Shiraz.
