This is very classy Sauvignon Blanc, one sure to become a household staple in no time due to it's brilliantly crafted pure fruit profile with layers and layers of complexity and great texture. This will drink wonderfully well in it's youth and be a great accompaniment to your favourite seafood dish.
100% Sauvignon Blanc, Blended from three complimentary regions.
Pale yellow is colour. The nose is fresh and aromatic with fruit-driven varietal aromas of tropical fruit, floral notes and grassy overtones. The palate has excellent purity with vibrant white tropical and citrus fruits matched by soft mineral acidity. Enjoy this wine well chilled with seafood and lightly flavoured dishes.
From the Winery
A very fast and precise vinification to avoid oxygen and maximise fruit expression and aromatics. A cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before maturation on lees for three months to build depth and texture. Malolactic fermentation is prevented to ensure crisp varietal character.
Parnasse is named after the mountain grass that flowers above their vineyards each spring, marking the beginning of a long, languid summer. Francoise Estier weaves the character and strengths of a number of individual regions to create a wine style truly expressive of the South of France – beautifully ripe and expressive whilst softly structured and easy to appreciate.
