De Bortoli Winemaker Selection Cabernet Sauvignon 2016
Deep burgundy colour exudes a powerful wine from the get go - with rich cherry red hues. You are greeted with lush Blackberries, plum and an underlying cedar, nutmeg and cinnamon nuances which bodes well. The aromas carry through onto the palate with a wonderful meld of summer plum and fruit cake being enhanced by the subtle cassis notes. The smart use of oak provides for nice vanilla undertones coupled with the ripe tannins give this wine depth and length of flavour. It will cellar and open up a bit, but really? Just drink with wonderful food and good friends.
From the Winery
Fresh early January rains prepared vines for what was to be a mild & then dry vintage. The milder temperatures allowed for wonderful expression of fruit aromas and flavours and allowed the retention of natural acid.
Fruit was selected by the winemaker and picked when both flavour and tannins were optimum. Cold soaked and fermented over 7 days. Cool temperatures of 22.0-25.0°C maintained to retain vibrant fruit.
