From The Winery
2016 had exceptional conditions, being consistently warm weather and no disease pressure. These conditions allowed the grapes to ripen to full maturity and full flavours without any issues. The grapes were harvested in the cool of the morning before being sent to the Winery where they were processed to stainless steel fermenters.
Colour: Crimson red with purple hues
Aroma: Lifted fruits of plum, fruits of the forest and chocolatey vanilla oak
Palate: Medium bodied with plummy fruit and soft tannins
Parcels of Merlot were crushed directly to automated stainless steel fermenters and inoculated with selected yeasts. Once fermentation started, the must was pumped over five times daily for a period of 5 days to extract the maximum colour and desired tannin level. After fermenting on skins for five days, the wine was then pressed off in stainless steel tanks and allowed to mature on premium French oak staves for a period of six months. Upon the completion of maturation Merlot parcels were then blended together to form this wine and a small amount of egg white finning was done to soften off the palate before bottling.
