Opening with a classic cool climate bouquet of ripe strawberries dipped in chocolate, the complex flavours gently unfold on the tongue and the sensuous mouth feel is typical Adelaide Hills Pinot Noir … sophisticated and sexy.
For many winemakers Pinot Noir is something of a “Holy grail”, a never ending quest of discovery. It’s my favourite variety and it can be challenging and unforgiving but when everything goes right it’s a wonderfully rewarding experience. This wine has a bright crimson hue with hints of brick red. The bouquet is intense with fresh strawberries, sweet vanillin oak, and hints of mocha and chocolate. The palate is big and chewy with an earthy character of herbs and wet clay. The tannins are gripping but smooth and the finish combines hints of cinnamon spice and savoury truffles. This is a wine that will reward careful cellaring but its superb drinking now especially when paired with flavoursome duck dishes, pate or mushroom risotto.
The Chris Hill Reserve wines are a collection of limited release, personal favourites that express an extra dimension of character and flavour. This wine was grown in a very cool part of the hills near Cudlee Creek and made by Greg Clack at Haselgrove winery in McLaren Vale. A long, cool soak on skins before fermentation has given an intense fruit palate with lots of new French oak delivering a toasty cedar wood background and savoury complexity. 2010 is proving to be a very good vintage and this wine wil continue to develop in bottle for many years.
