The Yealands Way Pinot Noir displays dark cherries and ripe plum flavours with spice and chocolate notes. Full bodied, with an elegant structure and a rich mouth feel.
The Yealands Pinot Noir was sourced from a single vineyard located in the Wairau Valley. Extended sunshine hours combined with a long, relatively cool growing season resulted in opti-mal fruit development. Soils here are a combination of free draining gravels with a shallow calcium deposit which retains water, reduces vine vigour and reduces the requirement for irrigation in spring and early summer. Yields were restricted by pruning to low bud numbers and shoot and bunch thinning ensured fruit quality was fully optimised.
The fruit was harvested at optimum ripeness. It was crushed, de-stemmed and after a period of cold soaking it was heated up and fermented naturally, and hand plunged daily. The wine was then left on its skins post fermentation for an extended period of maceration and gently pressed off into French oak barriques. The wine went through secondary fermentation then was left to age in the barriques prior to blending, a light fining, stabilization and filtration prior to bottling.
