This is the third release of Nebbiolo and it is a blend of five different clones from Gumeracha in the Adelaide Hills. It was hand harvested, crushed and vinified for 20 days in small open top fermenters, with no additions other than yeast added for fermentation. The wine was pressed and aged in large old oak barrels for 24 months before bottling. I am very fond of the 2007, it is the most elegant of the Nebbiolos I have made so far. It is an extremely perfumed wine with varietal aromas of roses, cherries and hints of wet earth and fresh leather. The palate is medium to light bodied and the tannins are flavoursome, lip smacking and long. It will age for at least 10 years and is best decanted a couple of hours before serving. This wine can be enjoyed over several days by not decanting it, just leave it in the bottle and watch it develop.
