Deep dark red in colour with a purple rim. The nose offers a hint of what's to come; big dark fruit aromas of plums, berries with spice and dried herb notes. The palate delivers rich, mouth-filling Heathcote Shiraz flavours of cured meats and anise. Tannins are balanced, offering structure to develop further with medium term cellaring.

Sourced from vineyards at Corop, Colbainabbin , and Chinamans Bridge in Northern Heathcote. The ancient red Cambrian soils of Northern Heathcote are ideal for dark fruited, plump red Shiraz. 2015 was a warm season with timely rainfall in Northern Heathcote producing dark brooding Shiraz.
Destemmed and fermented at 25 - 28 degrees C over 8 days. Pressed and matured in used casks for 6 months. Racked and aerated regularly to soften the wine.
“Nothing is more perfect than that melt-in-the-mouth moment you experience with a chargrilled dry aged steak, followed by a good glass of red. Creating a red that goes crackingly well with these ‘moments’ is pretty important,” says De Bortoli Wines Chief Winemaker Steve Webber. “Our goal has been to develop a full-bodied, texturally mouth filling red wine that is plump, fruit driven and seriously good for washing down chargrilled ribeye.”
