The colour is an indicator to the power and concentration of this wine, deep black red. There's dark blueberry spice with touches of liquorice and spice on the bouquet. The palate is full bodied and generous with subtle characteristics of French oak. Tannins are fine grained and assist in balancing the finish to good lenght.
The wine will be a good match for a variety of foods, especially red meat dishes such as rare roast beef, roast leg of lamb, BBQ steak and mature cheese.
From the Winery
Small batch ferment in two and four tonne fermenters over a twelve day period using natural yeast and hand plunged. The wine was left on skins post fermentation, for an additional fifteen days to enhance tannin complexity maximising flavour and length. Pressed to tank then racked to oak after four days (25% new French oak; 75% one and two year old French oak) for a total of two years.
