I am not at liberty to tell you the amazing winery we sourced this gorgeous wine from but suffice to say it is highly awarded, very old, very, very well respected and sells at a super premium all the time.
It all starts with excellent pedigree from this sought after region. A delicious nose of big white peppery shiraz berries, hints of dark cherry fruit and warming forest brambly berries, with cool cedar notes and some engaging cinnamon combining to herald this ultra premium Shiraz.
The tannins are engaging and develop alongside the fruit from the first drop, medium to fine and merge gloriously with the fruit to provide structure and depth.
This Central Victorian wine is complex lengthy with layers of delightful elegance rather than just a big bock of sweet, jammy fruit. The producer of this wine are names synonymous with classy Shiraz and this release is guaranteed in bold type in the curriculum vitae of both.
The Professor resides on the top echelon of the Scholars’ Series of wines – a label we reserve for only the best barrels from the best producers in the best vintages. It is a name that guarantees quality; one for aficionados – the erudite wine drinker.
In a staff tasting this wine was universally agreed to be one of the finest tried this year. The nose displays everything from Black forest cake, dark chocolate and vanilla to plum, oak and blackberry. The palate is exquisite with notes of stewed dark fruits cocoa and berries coming through strongly. A joy to drink!
