This unusual sparkling Riesling from the brilliant hand of Neil Paulett is charmat, Italian style. Light and crisp lime and pear with a touch of tropical fruit and some texture on the back half but certainly not complex, tingly lemon acids and fine bead, light dosage to make for an incredibly approachable wine with a great bright flavour.

Since the first vintage in 1983, Paulett Wines have garnered an impressive portfolio of reviews and awards, domestically and internationally, including the great 1995 vintage winning both the Top Riesling at the Hyatt/Advertiser awards and Best Riesling in the Penguin Good Australian Wine Guide.
In 2010, they won the Trophy for the ‘Best Riesling in the World’ at the Canberra International Riesling Challenge with their 2005 Polish Hill River Aged Release Riesling.
Neil Paulett, a talented winemaker has over 40 years’ experience in producing delicious, aromatic and flavoursome wines. Paulett’s reputation for producing wines of finesse, elegance and intensity is justly earned and their skill and care can be seen consistently from vintage to vintage.
Made from the second run of juice, which is cold settled to allow fermentation of clears over a two to three week period to ensure flavour retention.
Secondary fermentation utilising the charmat process occurs off site, as our facilities do not allow us to carry out this procedure. We give particular attention then to the expedition liqueuring to ensure that the final balance of flavours and mouth feel are to style. The wine shows true varietal flavours with a clean even balance, length and crispness. A wonderful burst of bubbles in the mouth with a classic persistent and refreshing bead.
