My darling wife and friends were after a reasonably dry sparkling wine that would lift their spirits and and leave them happy and active without a head ache or hangover! Some challenge as I can blend a ripper of a sparkling on quality but, quantity is always up to the social function and arm behind the glass! Still with this little beauty I reckon I have gone above and beyond the call of duty!
A charming bottle of bubbles! Wonderfully citric aromas balanced by notes of lightly toasted muesli dressed in yoghurt – perfect for race day breakfasts and midnight revelry alike. The palate has fruit in spades, with citric favourites to the fore and tropical base notes in the background, all rounded out by a lingering freshness. Crisp, spritzy, genuine, fun.
The Pupil Sparkling is made with grapes sourced from the highest quality vineyards. The fruit is picked early and handled as gently as possible. To maximise freshness and retain bright fruit flavours, we use modern cold fermentation technology. The bubbles are added using the Charmat process (tank fermentation) where the wine then undergoes a secondary fermentation at low temperature in pressurised vessels to create the fresh and vibrant flavour profile.
