Winemaking
Harvest began the last week of March and was completed after 15 days as persistent showers of rain during the summer months offered favourable conditions for botrytis to develop early compared to most vintages.
Botrytis from De Bortoli vineyards make up 75% of the fruit that went into making the Deen De Bortoli Botrytis Semillon. These vineyards consistently produce high quality Botrytis Semillon year after year. Every vineyard has its own flavour characteristics and nuances, so we harvest and ferment each one separately, selecting one parcel that is fermented on staves. After fermentation all vineyards are tasted and assessed for suitability for oak or kept unoaked to be able to add fresh fruitfulness into the final blend.
