James Halliday writes about the 2005 Macedon Ranges Wine Show of which he was Chairman of judges -
"If you use the most common climatic measurement for vinyards, heat degree days, Macedon is the coolest Australian mainland region (without taking into account the windchill factor.) Chardonnay, Pinot Noir and Pinot Meunier grown in conditions such as these are obviously tailor-made for sparkling wine base and the wines age with extreme grace . . . .".

This wine has a brilliant, attractive golden-yellow colour. It emanates fruity aromas (peaches, pears, apricots) and very biscuity notes (brioche, honey, almonds, hazelnuts). After a few minutes, the bouquet develops, leading to hints of sweet spices and with the fruity notes
taking on a more candied flavour.
In the mouth, the wine is flavoursome and full. The Pinot Noir grapes, the majority variety in this wine, provide strength and structure, while the finish, where the Chardonnay plays its role perfectly, remains fresh and clean. In good conditions, the Vintage 1999 can be kept for 10 to 15 years, during which time it will develop complexity and aromatic richness.

**** Crown Seal **** The finesse of Chardonnay with the power of Pinot, a bone dry, aperitif style sparkling wine created without traditional dosage liqueur. Vibrant pale straw colour with hints of green. A fresh yet complex blend of citrus and spice aromas are complemented by hints of cracked wheat and sweet pastry. The Chardonnay provides softness up front, and the Pinot Noir and Pinot Meunier offer a long lingering and crisp finish. Drinking well now but will remain fresh for 5-10 years. 93/100
Martell XO Supreme (extra old, 40 to 45 years old), is the oldest XO of its category coming from the two cellars “Purgatoire” and “Paradis” where Martell keeps its finest cognac. Presented in a beautifully crafted decanter, it is a powerful complex Cognac full of flavour with hints of almonds and vanilla and a long aftertaste.
