Adelaide Hills is stunning, produces excellent quality nearly every year and is a little quite at promoting itself as a truly premier region for aromatic whites.
This little beauty has over the last few years picked up 4 gold medals and 1 silver medal alongside 94 points from Halliday twice, these guys have simply got it spot on!
This is an absolute corker - Intensely aromatic freshly cut tropical melon, lychee and paw paw, all integrated with freshly squeezed lime juice with hints of lemon myrtle, gooseberry and cucumber. Lush fruit driven palate, balanced acidity and fresh tropical flavours are integrated well with green apple and melon notes. Soft, rounded fruit sweetness integrated with a hint of spiced apple on the finish gives great length and persistence.

2016 Vintage: 90 Points - James Halliday, Australian Wine Companion: "From three vineyards covering the length of the Adelaide Hills, one picked early, the other two around 12 degrees baume. Machine-harvested early morning direct to press with differing yeasts, kept separate on lees for 4 months; includes 8% semillon. Maximum effort for a $20 sauvignon. It is in the lemongrass/herb/snow pea spectrum rather than tropical, and has good length. Good food style."

The heart and soul of the Pond Series, 'Black Thursday' Sauvignon Blanc has consistently delivered a wine of outstanding value and quality. It derives its name from the Black Thursday bushfire in 1991 when the vineyard saved the local township.
Black Thursday was launched in 1996 and has quickly become Chain of Ponds biggest selling wine. The Adelaide Hills Wine Region is indisputably Australia’s premium region for growing Sauvignon Blanc and for good reason.
The grapes were delivered to the winery at dawn and destemmed but not crushed straight to air bag press in which the free run and pressings fractions were separated. All parcels were fermented separately. The early parcel was fermented with a traditional Sauvignon Blanc yeast and the remaining parcels were fermented predominantly with a blended yeast to release and enhance varietal character. The wine was stored on yeast lees for 4 months to build some mouth feel and texture then blended with only the best individual parcels selected. the blend was then stabilised and clarified. the wine was bottled under screwcap soon after vintage, to retain its vibrant freshness.
